And while you could cook them whole, separating the wingette from the drummette gives you more wings to go around. It's easy when you know how.If you stretch out a chicken wing, you'll notice that there are three sections. At one end is the wing tip which you will discard or save to make chicken stock. The middle part is called the wingette and the meatiest part is the drumette. Separating whole chicken wings into wingettes and drumettes gives you twice the number of pieces for your smoked wing recipes. They’ll cook faster and more evenly too.
