About the cut: Cowboy (or tomahawk) pork chops are a pork version of a beef cowboy cut ribeye steak with a bone extending out of the meat. This cut is flavorful and juicy but is a specialty cut that might not be stocked by every butcher. If they don’t have them on display, you can ask for a 1 1/2 to 2 inch bone-in center cut rib chop or loin chop.
