Sweet and savory, these BBQ Chicken Naan Pizzas are as robust as they are satisfying. Creamy, melted mozzarella and juicy smoked chicken thighs blend perfectly with sweet and tangy BBQ sauce. Real smoke flavor adds mouthwatering depth and complexity to this pizza while red onion and arugula give it a peppery bite. 

About the cut: A dark-meat poultry, chicken thighs are a favorite cut for many due to their flavor and tenderness. They start out a little tough because chicken thighs contain more tendons. But when they're cooked properly, they become tender and juicy because thighs contain more fat than white meat.

BBQ Chicken Naan Pizza
  • 2 cups sliced chicken thighs, boneless & skinless
  • 1 cup BBQ sauce, divided
  • > salt & black pepper, to taste
  • 4 pieces naan bread
  • > olive oil, to taste
  • 1 cup shredded mozzarella
  • 1/2 cup sliced red onion
  • > arugula, to taste

1. Preheat smoker to 375°F.
2. In a large bowl, coat chicken thighs evenly with 1/3 cup BBQ sauce, salt and pepper.
3. Place chicken on hot smoker grates, cooking on both sides until the internal temperature reaches 165°F using an instant-read thermometer, about 35 minutes.
4. Remove from heat and slice chicken thighs into thin strips, about 1/4-inch wide.
5. Brush both sides of naan bread with olive oil.
6. Drizzle with BBQ sauce, then top with mozzarella cheese, chicken slices and onion. Top off with another drizzle of BBQ sauce.
7. Place pizzas directly on the grates and cook for 8 to 10 minutes with the lid closed, until the cheese is melted and the naan is crispy and golden brown.
8. Remove from heat using a wide spatula.
9. Garnish pizzas with arugula and serve.
