Sticky, crunchy, spicy with a deliciously crispy-chewy texture...Candied Bacon really is all of that and more. This recipe combines salty and sweet for an irresistible snack that’s a guaranteed favorite. We basted bacon with brown sugar, maple syrup and hot sauce and then we smoked it and basted it some more.

We made this recipe on the Rider 600 Pellet Grill, but you can make it on your grill or smoker.

Bacon
  • 1 pound bacon, regular cut
  • 1 1/2 cup light brown sugar
  • 1/2 cup maple syrup
  • 1 teaspoon cayenne hot sauce
  • > apple wood pellets

1. Fill the hopper with wood pellets. Preheat your pellet grill to 300°F.
2. In a medium-size bowl, combine brown sugar, syrup and hot sauce.
3. Lay bacon strips on a baking sheet and brush both sides with the brown sugar mixture.
4. Place bacon directly onto grill grate and close the lid.
5. Cook for 5 minutes, then flip and brush with brown sugar mixture.
6. Cook for another 5 minutes. Repeat the process until bacon is done, 4 to 6 times in total.
7. Transfer bacon to a cooling rack and let cool completely before serving, about 15 minutes.
