These Smoked Sloppy Joes are definitely not your ordinary, average sloppy joes. Ground beef is smoked with apple wood under a layer of yellow onions, red bell peppers and garlic. Then, we added a spicy sauce with ancho chili powder that raises the heat index for a hearty, comforting meal.

We made this recipe on the Bronco Drum Smoker, but you can make it in your smoker.

Ingredients
Sandwich
  • 2 pounds 80/20 ground beef
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, finely chopped
  • 6 burger buns
  • > apple wood chunks
Sauce
  • 1 1/2 cups ketchup
  • 2/3 cup water
  • 1 tablespoon molasses
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon salt
  • 2 teaspoons ancho chili powder
  • 2 teaspoons black pepper
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce

1. Preheat your smoker to 300°F and toss a few wood chunks onto hot coals for smoking.
2. Place ground beef, onions, pepper and garlic in a large aluminum foil pan.
3. Set the pan in your smoker. Cook until the internal temperature of the meat reaches 140°F, about 20 minutes.
4. Meanwhile, combine ketchup, water, molasses, yellow mustard, Worcestershire sauce, salt, chili powder, pepper, Dijon mustard and hot sauce in a medium-size bowl and set aside.
5. Pour the sauce over the beef mixture and mix to break the ground beef into small chunks. Close the lid and continue cooking for another 15 to 20 minutes.
6. Remove from smoker and load beef mixture onto lightly toasted buns.
