Our Smoked Turkey Sandwich brings the smoky goodness of a whole turkey scaled down for a weekend cookout you can enjoy any time of the year. Seasoned turkey breasts are cooked over applewood smoke and basted in butter until they’re tender, juicy and delicious. We piled thick slices of smoked turkey breast on tangy sourdough bread, loaded it with toppings and slathered it with mayo. Now that’s what we call a smoked turkey sandwich. 

About the cut: Turkey breast is an easy meat to barbecue. However, since turkey breasts are very lean, they’re prone to drying out. We recommend that you brine, marinate and baste to deliver a juicy cut of meat.

We made this recipe on the Bronco Pro Drum Smoker, but you can make it on your smoker.

Ingredients

Smoked Turkey
  • 2 turkey breasts, brined
  • 1 teaspoon coarse black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 2 chunks apple wood
Sandwich
  • 1 loaf sourdough bread, sliced
  • 3 avocadoes, sliced
  • 4 tomatoes, sliced
  • 1 head iceberg lettuce, shredded
  • > mayo, to taste

1. Preheat your smoker to 250-275°F and toss wood chunks on top of hot coals.
2. In a small bowl, combine pepper, garlic powder and paprika. Lightly coat turkey breasts with the rub, using olive oil as a binder.
3. Place meat on the grates and cook until the internal temperature reaches 165°F.
4. Remove turkey breasts from the heat and rest for 10 minutes.
Hot TipGiving your meat the time it needs to rest allows juices to redistribute, retaining moisture for tender meat. The internal temperature will continue to rise 10 to 15 degrees until it levels out and then begins to fall.
5. While the turkey is resting, toast the sourdough slices on hot grates.
6. Slice turkey into 1/2” slices.
7. Assemble sandwich by placing turkey on a slice of toasted sourdough, followed by avocado, tomatoes and lettuce. Slather the top slice with mayo before covering and cut sandwich in half.
