These Tequila & Lime Chicken Fajitas are tender and popping with Southwestern flavor. Marinating overnight in a sweet and smoky reposado tequila and tangy lime juice makes them intoxicatingly tasty. Wrapped in warm tortillas and sprinkled with salty Cotija cheese, we’re betting they’ll disappear as fast as you can make them.
This recipe was created by our partner, Jonathan Jones @jonathan.bbq, who made this dish on the Rider DLX 1200 Pellet Grill, but you can make it on your grill or griddle.

Ingredients
Tequila Lime Chicken
- 1 pound chicken breast, sliced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 onion, chopped
- 2 limes, juiced
- 1/4 cup avocado oil
- 1/4 cup reposado tequila
- 1-2 tablespoons fajita seasoning
- 3 flour tortillas
- > crumbled Cotija cheese, to taste

In a large bowl, combine chicken, peppers, onion, lime juice, oil, tequila and fajita seasonings. Marinate overnight in the refrigerator.

Fill the hopper with applewood pellets and preheat grill to 450 F° in SEAR mode.

Replace circular center grate with griddle and coat with avocado oil.
4.
When hot, pour marinated stir-fry mixture onto the griddle.

Sauté until thoroughly cooked, about 8 to 10 minutes.

Remove from heat and set aside.

Lay tortillas on the griddle for 2 to 3 minutes, until warm.
8.
Spoon ingredients onto warm tortillas and top with Cotija cheese.
