If you like meat lovers pizza, you will love this Wood Fired Pellet Grill Pizza. It’s loaded with pepperoni, sausage, bacon, chunks of red onion, finely chopped garlic and apple wood-fired flavor. This classic recipe, cooked on a pellet grill, brings the taste of artisan wood-fired pies from Italy to your backyard. Now that’s amore.

We made this recipe on the Rider 600 Pellet Grill, but you can make it on your grill.

Ingredients
Pizza
  • 1 (10-12 ounce) pizza dough (homemade or store-bought)
  • 1/2 cup pizza sauce
  • 8 ounces shredded mozzarella cheese
  • 1/4 cup pizza sauce
  • 8-10 slices pepperoni
  • 2 Italian sausage links
  • 2 bacon strips
  • 1 medium red onion, quartered
  • 1 garlic clove, finely chopped
  • apple wood pellets

1. Fill the hopper with wood pellets. Preheat pellet grill to HIGH setting.
2. Grill sausages and bacon to desired doneness. Grill red onions for 3 to 4 minutes per side.
3. Cut sausages into 1/4-inch-thick slices. Chop the bacon and slice the onions.
4. Drizzle olive oil onto a large baking sheet. Place pizza dough on the pan. Flatten and stretch it toward the outer edges until it’s about 1/8 inch thick.
5. Transfer dough to hot grill grates. Cook on one side only until slightly charred, about 2 minutes.
6. Remove from grill and place on pan, charred side up. Decrease grill temperature to MEDIUM setting.
7. Add pizza sauce, mozzarella, pepperoni, sausage, bacon, onions and garlic.
8. Place pizza back on the grill and close the lid. Cook for 4 to 6 minutes.
9. Remove pizza from grill. Let it rest at room temperature for 5 minutes before serving.
