Texas-Style Rub brings the heat to your steak, chicken and pork plates with pungent spices like cayenne powder. Try this rub, inspired by one of the undisputed barbecue capitals of the world, on all your grilled and smoked meats. It’s most definitely a go to BBQ rub. You can follow this recipe to a T for the great state of Texas or customize it to your taste.

Match the rub you use to the meat you’re cooking. For ribs, pulled pork, chicken and brisket, we recommend Carolina-Style Rub. When you have chicken thighs, duck, beef or lamb on the grates, go with some Coffee Rub. And for everything from rib eye steaks and prime rib to scallops and shrimp, you can’t go wrong with a little Cajun Rub.

  • 3/4 cup kosher salt
  • 3/4 cup black pepper
  • 1 1/2 tablespoons garlic powder
  • 1 1/2 tablespoons onion powder
  • 1 1/2 tablespoons paprika
  • 1 teaspoon cayenne powder

1. In a small bowl, combine salt, pepper, garlic powder, onion powder, paprika and cayenne powder. Mix with your fingers to make sure there are no clumps.
Hot TipThere are a number of varieties of paprika and they range in flavor from sweet and mild to pungent and hot. Most grocery stores carry mild paprika. You’ll find the more pungent variety at ethnic and gourmet markets.
2. Generously apply or rub the seasoning over the entire surface of the meat.
