Bring the heat with Bacon-Wrapped Jalapeño Poppers filled with cream cheese, cheddar cheese, Monterey Jack and chopped chipotle. Grilled on the Rider DLX Pellet Grill, these pepper poppers are creamy, crispy and of course, spicy.

We made this recipe on the Rider DLX Pellet Grill, but you can make it on your smoker or grill.

Ingredients

JALAPEÑO POPPERS
  • 10 jalapeños peppers
  • 20 bacon strips
  • 1 cup cream cheese, softened
  • 1/3 cup shredded sharp cheddar cheese
  • 1/3 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh chopped cilantro (optional)
  • > apple wood pellets

1. Fill the hopper with pellets. Preheat pellet grill to 225°F in SMOKE mode.
2. Combine cream cheese, cheddar cheese, Monterey Jack and cilantro in a medium-size bowl.
3. Cut jalapeño peppers in half lengthwise. Core the interior with a spoon and fill with cream cheese mixture. Then wrap each half with a bacon strip.
4. Place poppers on grill grates, cut side up. Cook until bacon is done, about 1 hour.
5. Remove jalapeño poppers from the grill and serve.
