These sweet, spicy and smoky wings are the perfect finger food for any get together. The wings get perfectly crisp skin from a sear on the smoker and tangy flavor from a generous coating of buffalo sauce before finishing with creamy dressing and chives.

 

About the cut: You can find chicken wings sold as whole wings, flats (also known as wingettes) or drumettes. Flats and drumettes are pre-sectioned, while you’ll typically want to section whole wings yourself to get them to a manageable size.

 

This recipe was created by our partner Paul Saladino who made the dish on our Oklahoma Joe’s® Bronco Drum Smoker, but you can make it on your grill or smoker.

  • > Cajun Seasoning
  • > Buffalo Sauce

1. An hour before you start cooking, place your wings on top of a bed of paper towels to remove moisture and allow to rest.
2. Preheat your smoker to 300ºF.
3. Season both sides of the wings with your preferred BBQ seasoning and Cajun seasoning.
4. Place the wings on the cooking grate of the smoker and let them cook until they reach an internal temperature of 175ºF. Turn up the heat to high to crisp the skin to your preference.
5. Move the wings from the smoker to a large mixing bowl and top them with buffalo sauce, mixing thoroughly to coat.
6. Serve the sauced wings with a drizzle of blue cheese and a sprinkle of chopped chives.
