Our Smoked Burgers are stacked with Chorizo and Poblanos and loaded with guacamole and chipotle sauce. Cheesy and spicy but not too hot, they’re indulgent in the tradition of the best burgers. With so many flavors and textures, we can't guarantee you'll be able to fit your mouth around this burger.

We made this recipe on the Bronco Drum Smoker, but you can make it on your smoker.

Ingredients

Burgers
  • 2 pounds 80/20 ground beef
  • > salt and black pepper to taste
  • > oak wood chunks
Toppings
  • 6 slices Havarti cheese
  • 3 Poblano chilis, cut into halves
  • 6 chorizo sausages
  • 1/2 white onion, sliced
  • 1/2 cup cilantro leaves
  • 8 ounces guacamole, homemade or store bought
  • 6 burger buns, toasted
Chipotle Sauce
  • 3/4 cup sour cream
  • 1 chipotle in adobo sauce, finely chopped
  • > salt and black pepper to taste

1. Preheat your smoker to 275°F and toss a few wood chunks onto hot coals.
2. Place the chorizo sausages and poblano peppers onto hot grates. Cook for 20 minutes.
3. While they cook, divide the ground beef into 6 equal-size patties. Season each burger with salt and pepper.
4. Add burgers to the smoker grate and continue cooking until the internal temperature of the burgers and sausages reaches 155°F, about 30 to 40 minutes.
5. Top each burger patty with a slice of cheese during the last minute of cooking.
6. Cook the poblano pepper until soft, browned and gently charred, about 1 hour in total.
7. Remove burgers, sausages and chilis from the smoker and set aside to rest.
Hot TipGiving your meat the time it needs to rest allows juices to redistribute, retaining moisture for tender meat. The internal temperature will continue to rise 10 to 15 degrees until it levels out and then begins to fall.
8. In a medium-size bowl, combine sour cream, chipotle chilis, salt and pepper to taste. Set aside.
9. Cut the sausages in half lengthwise. Set aside.
10. Assemble the burgers on toasted buns with a spoonful of chipotle sauce, one poblano pepper half, a beef patty, two half chorizo sausages, onion slices, cilantro leaves and guacamole.
