Steak Fajita Pinwheels

Tender, well-seasoned skirt steak stuffed with melty pepper jack cheese and seared onions and bell peppers makes for a flavor explosion in every bite. Slicing the steak into rolled pinwheels before grilling makes for a simple but impressive presentation.
About the cut: Skirt steak comes from the beef plate primal cut on a cow’s stomach. It’s softly marbled with fat and is one of the most flavorful cuts of beef.

Ingredients
For The Vegetables
- 1 Yellow Onion
- 2 Bell Peppers
- 2 Cloves of Garlic
- 1 tbsp Neutral Oil
For The Seasoning
- > Preferred Steak Seasoning or Oklahoma Joe’s Texas Style BBQ Rub
For The Pinwheels
- 2 Lbs Skirt Steak
- 1/3 Cup Shredded Pepper Jack Cheese

Slice your onion, bell pepper and garlic.
2.
Heat up a pan on medium heat over the stove and add a drizzle of neutral oil.

Sear the vegetables to your preferred doneness and set them aside to cool.
4.
Combine all spices for the seasoning mix in a bowl.
5.
Trim the fat off your skirt steak and tenderize.
6.
Season the top of the skirt steak with the seasoning mix and cover with shredded cheese and the cooled vegetable mixture.
7.
Roll up the steak as tightly as possible, keeping all the filling inside the pinwheel, and secure with four evenly spaced skewers along the length of the roll.
8.
Sprinkle more seasoning mix on the outside of the roll.
9.
Chill the rolled steak for at least one hour.
10.
Heat your grill to at least 400ºF.

When you’re ready to cook, take the rolled steak out of the refrigerator and slice between each skewer to get round pinwheel slices at the end of each skewer like a lollipop.
12.
Lay your pinwheels down on the grill and sear for about 5 minutes or until desired sear is achieved. Flip and repeat.
13.
Take the pinwheels off the grill and let them cool for 10 minutes before dipping into your favorite sauce and eating.
