- 8-9 pound pork butt
- 5 ounces apple juice
- 4 ounces vegetable stock
- 3 tablespoons kosher salt
- 2 tablespoons brown sugar
- 1/2 teaspoon cayenne pepper
- 1/4 - 1/2 teaspoon xanthan gum (optional)
- 1/2 cup apple cider vinegar
- 1/2 cup white vinegar
- 1 tablespoon ketchup
- 1 teaspoon kosher salt
- 1 teaspoon sugar
- 3/4 teaspoon black pepper
- 1/2 teaspoon red pepper flake
- 1/2 teaspoon hot sauce
- 1/2 head green cabbage, shredded
- 1 small wedge purple cabbage, shredded
- 1 half sweet onion, peeled & shredded
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 teaspoons white sugar
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon celery seed
- 10-12 potato buns
