Bring your favorite soda with you to the smoker and use it to cook a chicken that’s perfectly juicy and tender inside with a great bite through the skin on the outside. A generous spice rub and the steaming can of Dr Pepper inside the chicken pack a punch of bold flavor in this simple but delicious recipe.

 

About the cut: Cooking a whole chicken over a can of beer or soda helps to keep the bird moist and juicy inside and can impart some of the flavor of the beverage.

This recipe was created by our partner TJ Rector who made the dish on our Oklahoma Joe’s® Bronco Drum Smoker, but you can make it on your grill or smoker.

1. The night before the cook, place the chicken in a covered pan in the fridge to dry out the skin overnight.
2. When ready to cook, preheat your smoker to 275ºF using your favorite wood for smoke flavor—TJ used pecan wood.
3. Empty 1/4 of the room temperature can of Dr Pepper and place the 3/4 full can in a can holder.
4. Remove the chicken from the fridge and season generously with your BBQ rub.
5. Place the chicken over the Dr Pepper can in the can holder.
6. When the smoker is at temperature, place the chicken complete with Dr Pepper can on the smoker and cook for 1 hour.
7. After the first hour, lightly spray the chicken with cooking spray and repeat about every 30 minutes until glazing.
8. Once the chicken’s internal temperature reaches 160ºF in the breast, glaze the chicken with the honey peach glaze and continue to smoke.
9. When the internal temperature reaches 165ºF, take the chicken off the smoker and let it rest for about 20 minutes or until the internal temperature is 145-150ºF.
10. Slice and serve.
