These melty, crispy cheese bites are topped with pickled jalapeños and bacon bits and smoked for a deliciously spicy, smoky snack. These cook up fast and easy, which is great news because if you serve these up at a party, your guests will definitely ask for more.

For Jalapeño Cheese Bites
- 8 Ounces Shredded Sharp Cheddar Cheese
- 4 Ounces Bacon Bits
- 1 Jar Sliced Pickled Jalapeños
- > Salsa
- > Sour Cream

Preheat your smoker to 325ºF.
2.
Prepare a muffin pan with a light spritz of cooking oil spray.
3.
Add a light layer of shredded cheese to each cup in the muffin pan—just to cover the bottom.
4.
Top each cup with a sprinkle of bacon bits and one slice of pickled jalapeño.
5.
Place the pan in the smoker and cook for 7-8 minutes or until melted and crispy. Remove the pan from the smoker.
6.
Top each cheese bite with dollops of salsa and sour cream and serve.
