Take the classic margarita to the next level by creating your own smoked pineapple-infused blanco tequila. Tajín-seasoned smoked pineapple adds smoky, sweet, and spicy flavors to the tequila, which pairs perfectly with classic margarita ingredients and a tangy Tajín rim on the glass. Add some smoked pineapple to the rim of your glass and you’ve got a cocktail that demands seconds.

Ingredients

For the Smoked Pineapple-Infused Tequila
  • 1 Whole Pineapple
  • to taste Tajín Seasoning
  • to taste Your choice of additive-free Blanco Tequila
For the Margarita
  • 2 oz. Smoked Pineapple-Infused Blanco Tequila
  • .5 oz Orange Liqueur
  • .5 oz Agave Syrup
  • 1 wedge Lime
  • for garnish Tajín Seasoning
  • for garnish Slice of Smoked Pineapple
  • for garnish Pineapple Leaves

1. To make the smoked pineapple-infused tequila, preheat your grill to 250ºF.
2. Trim the ends and rind off the pineapple and cut it into quarters lengthwise. (Set aside some pineapple leaves for cocktail garnish.)
3. Rub the pineapple with Tajín seasoning.
4. Smoke the pineapple for 2 hours at 250ºF before removing from the smoker.
5. Cut the pineapple into chunks, add it to a bottle or jar and cover with blanco tequila to infuse the liquor. (Set aside some slices of smoked pineapple for cocktail garnish.)
6. Let sit for at least two hours or overnight for the strongest flavor before using. Remove the pineapple from the liquor after 24 hours.
7. To make the margarita, combine smoked pineapple-infused tequila, orange liqueur, lime juice and agave syrup in a cocktail shaker with ice and shake vigorously until well chilled—about 20 seconds.
8. Use a lime wedge to rim the glass and dip into Tajín seasoning.
9. Strain the cocktail into a serving glass with fresh ice.
10. Garnish with pineapple fronds and a slice of smoked pineapple and serve.
