Mushrooms and Swiss cheese are an irresistible combo, but never more so than when they’re piled on top of a juicy, charcoal-grilled Mushroom Swiss Burger. And when you add caramelized onions, it’s the Holy Trinity of burgers, adding plenty of cheesy umami with just a hint of sweetness.

We made this recipe on the Blackjack Kettle Charcoal Grill, but you can make it on your grill/smoker.

Ingredients

Mushroom Swiss Burger
  • 2 pounds ground beef
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 stick butter
  • 1 onion, chopped
  • 8 ounces chopped mushrooms
  • 8 Swiss cheese slices
  • 4 Brioche buns

1. In a small bowl, combine paprika, salt, pepper, garlic powder and onion powder.
2. Divide ground beef into 4-equal parts and form into half-pound burger patties.
3. Season patties with the dry rub.
4, Prepare your grill for a 2-zone fire with all the coals on one side.
5. Place the patties on the grate over the coals to cook with direct medium-high heat.
6. Grill burgers for a few minutes per side; then place them on the opposite side of the grate to cook over indirect heat.
7. Place a medium-size cast-iron skillet on the grate over the coals and add butter to sauté the mushrooms and caramelize the onions until they’re tender and slightly brown.
8. Top burgers with 2 slices each of Swiss cheese until melted.
9. Load burgers onto toasted buns and top with mushrooms and onions.
10. Slice and serve.
