Our Peach Cobbler is baked over apple wood for a delicious smoked dessert you can make in an hour. Fresh peaches are sweetened with sugar and vanilla beans. A splash of lemon juice adds a refreshing tang. And buttermilk gives the batter a little extra depth of flavor. A true Southern classic, fresh peach cobbler is a popular favorite you can serve any time of the year.

We made this recipe on the Rider DLX Pellet Grill, but you can make it on your grill or smoker.

Ingredients
Peach Filling
  • 6 pounds peaches, peeled, pitted & sliced
  • 2 vanilla beans
  • 2/3 cup sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • > apple wood pellets
Buttermilk Batter
  • 3 cups all-purpose flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1/2 cup butter, melted
  • 1 1/2 cups buttermilk

1. Fill the hopper with pellets. Preheat pellet grill to LOW at SEAR setting with the Deep Dish Pan inserted in the grill grate.
Hot TipIf using your Deep Dish Pan for the first time, season it according to instructions before cooking.
2. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Add melted butter and mix with an electric mixer or spatula until the mixture resembles wet sand. Add buttermilk and whisk until smooth. Set aside.
3. With a paring knife, cut vanilla beans lengthwise. Scrape the inside to collect seeds.
Hot TipYou can substitute with 2 teaspoons of vanilla extract.
4. Combine melted butter and vanilla seeds in the preheated Deep Dish Pan. Stir in the peaches and cook until fruits are soft and the liquid is slightly thicker. Dissolve cornstarch in the lemon juice. Add lemon juice to the pan and stir to combine.
Hot TipYou can substitute with 2 ½ pounds of thawed, frozen peaches.
5. Using an ice cream scoop, scoop the batter on top of the cobbler filling.
6. Close the lid and slide the sear/smoke lever to SMOKE. Cook until golden brown, about 1 hour.
7. Remove the Deep Dish Pan from pellet grill. Serve warm with a scoop of smoked vanilla ice cream on top (optional).
